Whatever has happened to our beautiful Pumpkin scones? My trusty bakery no longer sells pumpkin scones, but has given way to much fancier date scones that apparently sell better.
I used to enjoy getting my Sunday paper and freshly baked pumpkin scones, then sit down in a warm place and have a hot coffee and a delicious pumpkin scone dripping with melted butter.
However I have been told the correct way to eat pumpkin scones is with jam and clotted cream.
Pumpkin seeds arrived with the First Fleet and grew prolifically in the Australian climate, providing a good source of food to the early communities.
Pumpkin scones started in the early 20th century in Australia and certainly made famous by Lady Flo Bjelke-Petersen who turned them into classic Queensland fare.
Next time you decide to some baking, why not give the humble pumpkin scone a go and treat yourself and friends to something special!
PUMPKIN SCONES RECIPE
Ingredients:
Makes 15 Scones
1 tablespoon of butter
½ cup of sugar
¼ teaspoon of salt
1 egg
1 cup of cold mashed pumpkin
2 cups of self-raising flour
Method:
Beat together butter, sugar and salt.
Add the egg, then your cold pumpkin and stir in the flour till
combined.
Turn out and cut into squares.
Bake in oven for 15-20 mins at 200c.
Then eat!
