In 2007, Shane and Tessa McLaughlin created Hillbilly Cider in Bilpin, inspired by their orchard lifestyle. Shane blends classic Australian and heritage cider apples, using the unique Julie™ apple, discovered nearby. “Hillbillification” captures the slow-living spirit of enjoying nature and good times with friends and cider in the Blue Mountains.
